Creamy Chicken And Chile Enchiladas

Ingredients:

1 lb uncooked chicken breast strips
1 package (8oz) cream cheese
1 can (4.5 oz) chopped green chiles
1 package spelt tortillas
2 cans (10 oz each) green chile enchilada sauce
1⁄4 cup shredded cheddar cheese

Directions:

Heat oven to 400° F. Spray 13 x 9 inch glass baking dish with cooking spray. In skillet, cook chicken over medium-high heat stirring occasionally, until no longer pink in center. Stir in cream cheese and chiles; reduce heat to medium. Cook and stir until blended and cream cheese is melted. Spoon chicken filling onto tortillas; roll up and place seam sides down in baking dish. Pour enchilada sauce over top and sprinkle with cheddar cheese. Bake 15-20 minutes or until hot and cheese is melted.

Paleo Barbeque Sauce

Ingredients:

1 can tomato puree (170g)
1 1/2 cups beef stock (250-375ml)
3 cloves garlic, finely diced or crushed
1/2 onion, finely diced
2 tablespoons dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon extra virgin olive oil
1 teaspoon sea salt
2 tablespoons chili powder (mild)
2 tablespoons honey

Directions:

Combine all the ingredients in a pan. Adjust the amount of beef stock you use depending on how think you want the bbq sauce to be. Cover the pan with a lid and bring the sauce to a low simmer. Leave to simmer, stirring and tasteing frequently for about 20-30 minutes. 

Makes enough to serve with BBQ for 6-8 people.

Ingredients:

2 lbs ground beef
onion or onion powder
paleo bbq sauce  (recipe listed on website)
2 tablespoon mustard
2 tablespoon maple syrup (grade b)

Directions:
 
Brown meat and onions and drain. If didn't use onion, add onion powder and rest of ingredients. Simmer until moisture is about gone or as desired.

Cinnamon Roll Cake

Ingredients:
3 cups spelt flour
1/4 teaspoon salt
1 cup xylitol (or stevia equal to 1 cup)
4 teaspoon baking powder
1 1/2 cup milk
2 eggs
2 teaspoon vanilla
4 tablespoon butter, melted
 
Filling:
2 sticks butter, softened
1 cup maple syrup grade b
2 tablespoon spelt flour
1 tablespoon cinnamon
2/3 cups nuts optional
 
Glaze:
2 cups raw honey
5 tablespoon milk
1 teaspoon vanilla
 
Directions:
With a mixer, mix flour, sugar, salt, baking powder, milk, eggs, and vanilla.  Once combined well, slowly stir in 4 tablespoon melted butter.  Pour batter into a greased 9 x 13" baking pan. In a large bowl, mix the 2 sticks of softened butter, syrup, flour cinnamon and nuts until well combined.  Pour evenly over cake batter by the tablespoons and use a knife to marble/swirl through the cake.  Bake at 350 for 25-30 minutes or until toothpick comes out nearly clean from the center.  Place honey, milk and vanilla in a large bowl.  Whisk until smooth. Drizzle over warm cake.  Serve warm or at room temperature.

Grandma's Nelson Fruit Cobbler

Ingredients:

Dough -
1 cup spelt flour
1/3 cup coconut oil
pinch of salt
1 teaspoon baking powder
1/2 cup milk

Syrup -
2 cups xylitol
2 cups water
(boil until sugar dissolves)

Directions:
 
Roll out dough.  It is a tender dough and will tear easily.  Cover with fresh fruit. Sprinkle with cinnamon and roll like a jelly roll.  Slice to desired thickness.  Melt 1 stick butter in oblong pan.  Lay each slice in the butter cover with syrup.  Bake till brown at 350 about 45 minutes.

Chili Relleno Bake

Ingredients:

3 - 4oz cans of chopped green chilies
1 1/2 to 2 lbs. ground beef
1 onion chopped
1/2 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
couple of dashes of tabasco
4 eggs
1/2 cup whipping cream
1 1/2 cup grated white cheddar cheese
 
Directions:

Brown ground beef and chopped onion and drain off the fat.  Season mixture with salt, pepper, and garlic powder.  Place 1/2 of chilies in a 9 x9x 1 1/2 inch baking dish, sprinkle with cheese and add the meat mixture.  Place the other half of the chilies over meat.  Combine the eggs, and cream with salt and pepper.  Combine until smooth and pour over the meat in the baking dish.  Bake at 350 for 45-50 minutes.  Sprinkle with grated cheese.

Oat Pancakes

Ingredients:

3 eggs
1 cup whole oats
1 cup cottage cheese
2 teaspoons xylitol
1 teaspoon cinnamon
1 teaspoon vanilla
(add berries if desired)

Directions:

Mix all ingredients in blender until smooth. Pour on hot, greased skillet. Serve with butter and/or unsweetened apple butter.

Strawberry Bread (Muffins)

Ingredients:

3 cups oat flour
1 teaspoon soda
1/2 teaspoon salt
1 tablespoon cinnamon
1 cup xylitol
1 cup stevia
3 eggs, beaten
1 stick of butter, melted
2 (10 oz) packages of frozen strawberries, chopped coarsely

Directions:

Mix dry ingredients together. Add the other ingredients. Pour into greased loaf pan (of muffin tin). Bake at 350F for 1 hour.

Pizza Dough

Ingredients:

2 1/2 Cups Spelt Flour
1 tsp. Baking Soda
4 T. Olive Oil
3/4 - 1 Cup Water

Directions:

Mix dry ingredients, add 3/4 cup water and oil. Stir until it forms a ball and add water until desired consistency. Knead. Roll this out and put on a pizza pan. Bake at 375F for about 10-15 minutes. Top with pizza fixings and bake. 

Note: This recipe can be tried with sorghum flour for a crispier crust.

Breakfast Casserole

Ingredients:
  • 8 oz sharp white cheddar cheese, grated
  • 8 oz monterey jack cheese, grated
  • 8 oz plain Greek yogurt
  • 1 dozen eggs
  • 2 (4 oz) cans of green chilies
  • sea salt
  • pepper

Grease the bottom of a 9x13 inch pan and put the green chilies on the bottom of the pan. Spread the cheese over the chilies, and mix in yogurt, eggs, salt and pepper. Pour over cheese. Bake at 350F for 45 minutes or until set.
