Banana Breakfast Cookies

  • 3 bananas
  • 2 cups quick cooking oats
  • 1/3 cup apple sauce
  • 1 egg
  • 1/4 cup almond milk
  • 1/4 cup raisins
  • 1/2 cup chopped walnuts
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 cup chocolate chips (optional)

Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients in a large bowl until well combined.
  3. Place heaping tablespoons on a parchment lined pan and gently press with a fork.
  4. Bake 15-18 minutes or until lightly browned. Cool completely.
  5. Store in the refrigerator up to 4 days.

Baked Squash (Flodie's recipe)

4 squash medium to small
1 large onion
Boil, drain and mash (like mashed potatoes)

Add
salt to taste
pepper to taste
sugar
butter
cream or milk
flour to thicken

Topping
crackers, crushed
melted butter
mix together and save

Bake in oven at 350 for about 45 minutes.  Top with buttered cracker crumbs and return to oven to brown top.

Serves approximately 4

​Bigger dish use more squash and onions, etc.
