  • 3 Tablespoons coconut sugar
  • 2 cups spelt flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 2 - 4 tablespoons butter (melted)
  • 2 eggs
  • 1 teaspoon vanilla

Instructions
  1. Preheat oven to 350 degrees. Spray a 9x13 baking dish with non stick spray.
  2. Mix together the sugar, flour, baking powder, and salt.
  3. In a larger, bowl mix together the milk, eggs, melted butter, then stir the flour mixture into the milk mixture, just until combined. The batter will be a bit lumpy.

  5. Allow it to cool for about 5 minutes, then cut into squares and serve with your favorite toppings.

*If you want blueberry or strawberry pancakes make sure to put them into the pan first then pour your batter on top. If you are using frozen fruit make sure it is thawed and drained first.

Stay Safe Online, Jags!

With students at home and on devices, parents might be wondering if the apps their children are using are safe. A great place to check out if these apps are worthwhile is Common Sense Media.  Parents can search apps here: https://www.commonsensemedia.org/app-reviews.

While we at GCSD are by no means experts on these apps, we've recently had some parents express concern over the availability of chatrooms to young children through the FarmVille and FarmVille 2 apps.  We simply wanted to pass along a note to parents regarding these apps as we know many of our young students use them.
Besides appropriate apps, Common Sense Media also has recommendations for movies, TV shows, and books along with information parents need to know to keep their children safe online.

This recipe is geared for ALL age groups! Who doesn't like to build their own pizza?! ENJOY!!

Tortilla Pizzas
  • 3-4 Spelt Flour Tortillas
  • 1 cup shredded mozzarella cheese
  • ¾ cup spaghetti or pizza sauce (any brand, any flavor but sugar free is healthier)
  • toppings (pepperoni, salami, ham, pineapple, olives, veggies...whatever you want and have on hand!)

Instructions
  1. Preheat oven to 425 degrees Fahrenheit
  2. Take a fork and poke holes throughout tortilla. This will allow it to be more crispy without burning or becoming soggy in the middle.
  3. Take about one tablespoon of sauce and spread all over.
  4. Sprinkle cheese as desired.
  5. Add your favorite toppings.
  6. Cook in oven for about 10 minutes. (Until cheese is fully melted and edges look crispy)

From the GCSD Kitchen -- Clean Eating Ice Cream

This is actually a favorite at school!!

Clean Eating Ice Cream

2 to 3 Frozen Ripe Bananas (completely frozen)
1 to 2 cups of Favorite Frozen Fruit
Heavy Cream or Milk (use as much as you like to your consistency)
Stevia (to taste)

You can use a food processor or blender. Put bananas in processor and chop to a pulp then add your fruit and blend until smooth. If your mixture becomes too thick to blend add some cream or milk to get the mixture flowing again. Add your desired amount of Stevia.

SIDE NOTES:
Remember you can always add more milk so start with a small amount unless you want a smoothie.
If your bananas were good and ripe you should not have to add stevia.
If you use Stevia, remember you can add more as you go. Trust me, start out with a small amount.
