1 1/2 cups packed dates (240g)
6 tbsp raw almonds (80g)
1/2 tsp organic vanilla extract
1/2 tsp ginger
1/2 tsp cinnamon
1/4 tsp nutmeg
pinch of cloves
pinch of sea salt
1 tbsp coconut oil
Place the dates and almonds in a food processor or really strong blender. Pulse until the dates and almonds are small chunks and transfer to a mixing bowl. Add in all remaining ingredients.
Using your hands, mix well to ensure an even coating of everything. Using parchment paper, flatten out the mixture to the size of the bars you want. You can also use individual ziplock bags and form the bars inside the bags.
Place in the refrigerator and let cool.
